Traditional Seville dishes you need yo try

The national cuisine of Andalusia is as multifaceted and colourful as Spain itself. It is a rich treasury of ancient recipes. Some are taken from the Moroccans who once lived in these parts; others are borrowed from the Italians, French and Greeks. Local traditional dishes are a unique and harmonious combination of ingredients and spices. Here is a short list of the top things to try in Seville.

The most famous Spanish national dishes are paella and tortilla (or Spanish omelette). Paella is rice stewed with vegetables, seafood or chicken, while tortilla is an omelette or casserole made of potatoes and eggs. Almost all cafes and restaurants in Seville offer them on their menus.

Gazpacho was made in Andalusia. It is a classic cold Spanish soup. Peasants and poor people from stale bread, vinegar, water and garlic once made soup. A little later, tomatoes and cucumbers were added to the traditional ingredients.

Salmorejo – the second most popular cold tomato cream soup. It differs from gazpacho in that it is thicker in consistency. It is served with jamon and eggs.

Bocadillo serranito is a typical sandwich of Andalusian cuisine, especially of Seville. The sandwich consists of either a viena andaluza (an oblong, crusty bread roll) or a mollete (a soft, rustic white bread roll) which is cut in half lengthwise and filled with slices of fried pork tenderloin (lomo de cerdo) and Serrano ham (jamón Serrano), strips of fried green peppers (usually the Italian variety), and tomato slices.

Ajoblanco – a white cold soup made of water, butter, garlic, bread and ground almonds. It is served with grapes or melon slices.

Espinacas Con Garbanzos. Bread, spices and chickpeas are added to the boiled spinach. Espinacas con garbanzos has its roots in Seville's Moorish and Jewish history and is still popular in modern tapas bars, where it is often served with picatoste (a large homemade crouton).

Carrillada de Cerdo. Pork cheek is one of Seville’s most traditional stewed meats. Pork is braised in wine and spices with carrots and garlic.

However, this is the case if you plan to avoid visiting expensive restaurants. So, how much does it cost to eat in Seville:

  • set lunch — 12-15 EUR;
  • lunch in a tourist café on the seafront — min. 20 EUR;

If you want a hearty meal and to save a little money, you should look for tapas bars further away from the centre. What do you think is street food in Seville? Indeed most people will immediately imagine bright stalls with hot dogs and shawarma, beautiful display cases with fresh pastries, and stalls with fruit or boiled corn. Incredible, but true: such fast food is found everywhere, but not in Spain! In this country, the preparation and serving of food are treated with great respect, so eating on the go is not accepted. Locals prefer to drink coffee slowly and order tapas or pinchos as a snack.

Tapas are type of Spanish dish which is usually served as a snack before dinner or with drinks. Small tapas are usually included in the price of a drink.

Pinchos differ from tapas in the complexity of their preparation. They are often served on skewers. The main difference is that pinchos are a more refined snack that acts as a separate dish rather than a complimentary appetiser to a glass of wine.

The most popular tapas in Seville is the Serranito sandwich. It consists of white bread, pork, roasted peppers and Serranito jamon.

There are three price categories of tapas found in local eateries, depending on the size of the portion:

  • It is customary to dine very late in Seville. Some restaurants are open for dinner from 20:00.
  • The expression "IVA includo" indicates that VAT is already included in the bill.
  • Dining on a terrace with a beautiful view can cost more than indoors.
